Mute is a typical dish that combines meats, vegetables, and spices in a slow and careful preparation. With simple ingredients and lots of love, you can create a flavorful and storied meal to share on any special occasion.

Ingredients

4 liters of Water
1 kilogram of Beef leg
1 ½ kilogram of Beef ribs
1 kilogram of Pork meat
1 ½ kilogram of Tripe (callos)
1 kilogram of Peeled corn, cut in half
1 pound of Peeled potatoes, cut into cubes
1 pound of Pumpkin, peeled and chopped
½ kilogram of Pre-cooked chickpeas
2 Guasca branches
2 tablespoons of Finely chopped parsley
Salt, pepper, and cumin
1 pinch of Baking soda
Preparation
Step 1 : The ribs, pork meat, and onions are cooked together in 2.5 liters of water for 1 hour.
Step 2 : Then they are taken out and set aside.
Step 3 : The pork meat is chopped and cut separately from the ribs.
Step 4 : In a pressure cooker, cook the tripe with a pinch of baking soda and 1.5 liters of water covering it for 45 minutes, then remove and chop into small pieces.
Step 5 : The beef leg is also cooked in the pressure cooker for half an hour.
Step 6 : Mix the broths from the ribs and the beef leg, add the corn and chickpeas, and cook for 20 minutes.
Step 7 : Then add the potatoes, salt, pepper, and cumin, and cook for another 20 minutes.
Step 8 : Finally, add the pumpkin, cover, and simmer over low heat for 25 minutes.
Step 9 : Return the meats to the broth, add the guasca, and cook the mute over low heat for another 10 minutes.
Step 10 : When serving, place a generous spoonful of hot stew on each plate and sprinkle with parsley.
