Ingredients

6 cups of Chicken broth

2 cups of Whole milk

1 cup of Cream

2 cups of Avocado purée

2 Peeled and chopped onions

2 Crushed garlic cloves

2 tablespoons of Butter

1 tablespoon of Wheat flour

½ teaspoon of Ground oregano

4 Finely chopped scallion stalks

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Heat the milk over low heat.

Step 2 : In a separate skillet, sauté the onion and garlic in butter.

Step 3 : Once golden, add the oregano and then the flour, sautéing for 2 minutes.

Step 4 : Mix in the avocado purée, salt, and pepper.

Step 5 : Gradually add the hot milk and broth while stirring, until a smooth cream forms, about 15 minutes, being careful not to let it boil at any point.

Step 6 : Add the cream, stir, and adjust the seasoning as needed.

Step 7 : Finally, serve in bowls or soup plates topped with chopped scallions.
