Ingredients

3 cups of Crimson or red beans

2 pounds of Ground beef

2 pounds of Pork cracklings

2 pounds of Ground beef pulp

6 Sausages

6 Eggs

1 pound of Rice

3 Ripe plantains

4 Large onions

4 Tomatoes

5 Garlic cloves

3 Chilies

1 Medium carrot

½ Green plantain

1 Avocado

Oil

1 pinch of Salt

Preparation

Step 1 : One day before preparation, the beans should be soaked in a container with water overnight to soften them.

Step 2 : Once soaked, they are cooked and seasoned with a bit of sautéed mixture in a pan with butter, garlic, chilies, onion, and tomato, sautéing for ten minutes over medium-low heat until thickened.

Step 3 : Add green plantain and carrot cut into pieces.

Step 4 : Separately, sauté the ground beef in a pan with oil, salt, and the remaining half of the sofrito used previously.

Step 5 : In a hot pot with oil, fry the pork cracklings and sausages.

Step 6 : Ripe plantain slices are prepared in a pan with oil.

Step 7 : In a saucepan with butter and salt, fry the eggs.

Step 8 : Cook the rice using two cups of water for each cup of rice, adding a bit of oil and salt to taste.

Step 9 : Allow to cook over medium heat until the rice is dry.

Step 10 : To serve the Paisa tray, place a bit of rice, beans, pork cracklings, egg, and a piece of avocado on a plate.

Step 11 : It can also be accompanied with a small white or yellow arepa according to personal taste.
