½ kilogram of Beans

½ kilogram of Pig's trotters

3 liters of Water

1 Onion

1 Bell pepper

2 Garlic cloves

1 Tomato

Oil

Paprika

Oregano

Ground cumin

2 Green plantains

1 Carrot

1 pinch of Salt

1 pinch of Pepper

10 milliliters of Lemon juice

Preparation

Step 1 : To prepare this recipe, the beans should be washed and soaked for at least two hours.

Step 2 : The trotters are placed in a container with lemon juice and salt, then rinsed and set aside.

Step 3 : On the other hand, the beans are cooked in boiling water along with the trotters, over low heat, for two hours.

Step 4 : In a skillet with oil, chop the onion, bell pepper, tomato, and garlic, sauté and add salt, paprika, cumin, and oregano; this mixture is removed from the heat once cooked.

Step 5 : The plantains and carrot are peeled, cut into medium pieces, and added to the pot along with the sauté, cooking for an additional 20 minutes.

Step 6 : Adjust seasoning with salt and pepper if necessary.

Step 7 : Finally, turn off the heat, let it rest for a few minutes, and serve.
